Baader 444 Fish Gutting and Heading Machine
This listing is for a fully reconditioned Baader 444 Heading and Gutting Machine, manufactured in 2006 and rebuilt in our workshop for reliable, long-term operation. The machine is designed for high-volume processing of cod, saithe (pollock) and haddock in the 50–90 cm, 1–7 kg range, which covers the most common whitefish sizes on modern lines.
Baader’s revolving heading and gutting system holds each fish securely while it passes through the tools. This gives a very precise head cut that leaves the collarbone on the trunk. Which is ideal for saltfish production, and a clean symmetric belly cut that improves product presentation and yield.
The heading unit can be switched off when only gutting is required, so the same machine can be used for headed-and-gutted production or head-on gutting.
For the operator this is a very ergonomic machine. Fish are simply pushed into the infeed from one side without any lifting, speed is continuously adjustable and the machine requires only one person to run. With all key parts repaired, checked and adjusted during reconditioning, this Baader 444 offers a cost-effective way to upgrade manual or older gutting systems to an industrial, high-consistency solution.

Baader 444 combines heading and gutting in one compact frame and accepts fish with or without a bleeding cut, as well as headed but ungutted fish. This flexibility lets you keep the same machine in the line even when catch composition or work methods change.
The process starts when the fish is clamped in the revolving drum. A controlled bleeding or throat cut is made as close as possible to the collarbone without damaging it, followed by an accurate symmetric belly cut. The gutting tools then remove viscera carefully while separate discharge paths carry trunks, heads and guts out of the machine, which reduces contamination risk and improves hygiene.
Several design choices distinguish the Baader 444 from older straight-through gutting systems. The revolving holding unit stabilizes the fish through every cut, which helps maintain yield and reduces waste.
Collar bones remaining after heading make the machine particularly attractive for saltfish and stockfish production, while the option to gut without prior bleeding simplifies onboard processing when time and space are limited.
Open design, removable clamps and optional hydraulic operator platform make daily cleaning and adjustment faster and improve ergonomics on the line.
